Shepherd’s pie quesadilla {vegan + gluten-free}

Phew! When is it holiday?? These days every moment, even those in which I am supposedly bored, are basically booked or planned for. I’m not exhausted per se, just rather grumpy. Anyway, all that being said I did some meal prep on Sunday which helped with stress relief and I felt much better, not to mention the house was nicely stocked again for a week’s worth of munching. Carrot oat balls

Whoo hoo! Ever since I finished exams I have been living life to the full…or at least getting full on these carrot oat balls. Same thing, nay? Anyhow, since I am unchained for the moment I have a breath to catch in time and space and start getting all my ducks in a row for the next few adventures: my teaching practicals starting at the beginning of next month, a possible cool second job that will make me feel rich, a trip to Morocco to plan (ARGH!), and other treats like homing kittens and attending courses on how to be an awesomesauce teacher. Well, if you thought that was a mouthful you should see the inside of my head: it’s just a non-stop blab fest, which is why I’m going to switch over to food now to calm us all down again 😀

My last exam of the season is tomorrow, so naturally I’m procrastinating: reading fic, watching youtube clips on reincarnated Egyptians (Omm Seti), and generally plotting my life around comfort food. Cauliflower nice-cream bowls

I simply have to share something that’s been taking over my life for the past fortnight or so since my blender broke (one of many). When you have a habit of smoothie bowls for breakfast and no means to an end, you make a plan! Tangerine grape popsicles

It is ridiculous at the moment in South Africa – one minute hot and the next cold. All my meal planning goes out the window when I plan for warming oat bowls and steaming zoodles and then it’s all sunshine and chirpiness, or when I haul out the frozen fruit and it starts raining. At any rate I never need many excuses to indulge in something delicious! With that in mind, I’m going to represent the south and share a super easy but delicious and somewhat creamy tangerine grape pop recipe.grapepopssplash

Breakfast doughnuts

Ack! I’m falling behind with everything in life thanks to school starting back up and exam studying going on and on forever, but I have to share this bit of munch since it’s what kept me going today in between rushing from place to place. It’s a super dense, tasty and very much made to be an any-time snack. I’ve named these breakfast doughnuts since I had them for second breakfast, but there’s no shame in filling them with hummus and pesto for a savoury dinner dish with salad even or nice-cream and date paste for something sweet!breakfastdoughnutsplash
