My last exam of the season is tomorrow, so naturally I’m procrastinating: reading fic, watching youtube clips on reincarnated Egyptians (Omm Seti), and generally plotting my life around comfort food. To totally legitimize this terrible behaviour I’m sharing something I’ve been munching a few times now for lunch with much glee: easy chickpea scramble that is so protein-packed you won’t feel hungry for a long while after.
The weather in South Africa is ridiculous at the moment. Boiling hot one moment, bursting with swooshy winds and rain the next. With such inconsistency it is better to err on the side of caution and stock up on hold and cold foods to ensure happiness all round. On the toasty front I decided to finally make some dumplings, since I recall Man-thing asking about them a while back, and it’s always a good excuse to make a stew. 😀 Are you cold, miserable, hungry? This is such a fun bread to have in the house, no jokes! I bought an excess of bananas the other day (as if there is ever such a thing, as I have mournfully discovered), so I decided to bake one of Man-thing’s favourites: the good ol’ banana bread. Except, MOAR banana and crunch and yum and also healthy stuff, because we can’t just eat chocolate all day long, except for when we do and it’s hidden inside wild baked goods. 😀
Ever since February I’ve been in a bit of a body funk, not knowing what to eat or what’s going to make me regret eating, and unfortunately basic cauliflower is not my friend. Mashed down and hidden in different forms, however, it’s a dream come true because it’s such a versatile ingredient that happens to be healthy and low-carb. I wouldn’t say I’m necessarily on a low carb kick (definitely not, in fact), but it’s just one of those added bonuses. Flourless, easy and a good staple to keep in the house, these flatbreads are pretty ninja at keeping you full on the go.
I’ll explain the madness behind this combination below, but trust me – it’s bladdy tasty! Man-thing really enjoyed it – he even ate 90% of my little oat loaves in one day, the rascal, despite knowing his dreaded nemesis (cauliflower) is the main ingredient. MUAHAHA!
