Nutty crumble cocoa oat bars


Warning, this is all about the comfort food, since this has been a sucky month and I don’t foresee any let-up anytime soon (and hence chocolate!). I’ve got my first exam later today, so naturally I’m procrastinating just a little, but I’ve been meaning to share my comfort munchies for the past week or so, so here goes! 🙂crumbletopdeckbarssplash

crumbletopdeckbars5One of these days I’ll finally stop studying…for real. I mean, there has to be a natural stopping point, right, because it’s not like I’m a junkie for writing exams or anything. All I want at this point is the slow burn of permanent employment and the sweet thrill of taxes! The first thing I had wanted to buy with some serious adult money was a freezer, but my awesome in-laws beat me to the punch this weekend and bought one for us, so I guess I’ll have to set my sights on something else. I’m thinking the freezer needs filling with at least my bodyweight in nuts 😀crumbletopdeckbarsnomNuts are one of my favourite stress-release munchies, because they’re filling and tasty and make my mood improve with their mere presence in the house. With that in mind I quickly whipped these up last week and they were magically easy and tasty; perfect to grab at any hour of the day when I could feel the ennui of hitting the books hit me over the head at the same time.
crumbletopdeckbars2These are ridiculously easy to make, since I’ve been low on time of late and can only do so much procrasti-baking, and quite a lot comes out of a batch, which means that one can either share or indulge a few times a day – however the mood flies! I gave some to my in-laws and there was the seal of approval, but you can go even more wild on the chocolate or sweetness, or throw some vegan marshmallows in there – whatever your comfort food is, it can make a debut (well, unless it’s seitan or something).crumbletopdeckbars3

Ingredients (serves 12):


  • 1 cup GF oats
  • 3/4 cup soaked dates
  • pinch salt
  • 2 tsp vanilla extract
  • 2 TBSP date soaking water
  • 2 TBSP jam of choice (I used apricot)

Cocoa layer:

  • 1 cup buckwheat flour
  • 1/4 cup cocoa powder
  • 1/2 cup soaked dates
  • pinch salt
  • 2 tsp vanilla extract
  • 5 TBSP date soaking water


  • 1/3 cup mixed nuts, crushed somewhat
  • 1/3 cup puffed brown rice
  • 2 TBSP balsamic vinegar
  • 1 TBSP liquid sweetener
  • pinch salt
  • 1 TBSP chocolate sprinkles


  1. Line a loaf pan.
  2. Blend your base ingredients and pack it down evenly and smooth over with the back of a wet spoon.
  3. Spoon your jam over evenly.
  4. Blend your cocoa layer and carefully spread on top, again with the back of a wet spoon to make sure it’s nice and smooth.
  5. Mix your topping and press firmly into the top.
  6. Freeze for half an hour or so until set, then slice and serve or store in the freezer.
  7. Can be munched from the freezer with only a few minutes defrosting.

crumbletopdeckbars10 crumbletopdeckbars1I’m a sucker for jam in my desserts, so this was delicious and reminded me a little of my Sachertorte ice-cream cones. The buckwheat flour is just amazing in terms of how smooth and wonderful it gets when blended with a liquid, and even without the base makes a great freezer fudgy treat. crumbletopdeckbars6 crumbletopdeckbars8I used vermicelli on here (leftovers from my birthday smoothie bowl) but you can use any species of chocolate really, or even drizzle chocolate on top. Again, do what your comfort heart tells you. Sometimes one needs crutches to get through a rough stretch, but I would say that even though these felt like I was going wild, they’re actually still healthy, so win-win for mental and physical health!crumbletopdeckbars9 crumbletopdeckbarsAnd out of all these crazy days and times there are positives to be had! My foster boy Bullet, who you may remember stayed with us for a spell, got adopted along with another adult cat from the shelter! ❤ And to boot our little Peanut is booked to go to his new family in a month! Whatever else happens in life I’m so glad fostering is part of it, because it always helps me look at the bigger picture and think of all the creatures that go on to have wonderful lives with amazing forever families, and that our existence is just one thread in it all 🙂

  1. Oh, I think the cocoa is missing from the ingredient list! Otherwise an intriguing recipe though, all the world of possible toppings……..


    • Ah thank you for picking that up! 😀 And yes, so many toppings – next time I want to try pistachios for the saltiness and some cranberries maybe. It’s pretty much a recipe to empty out the scrapings of the pantry 😉

  3. They are like big hunky chunky bars of yum! Wow these look incredible! I was in love with them after all the dates in the base, but once you threw some rice crisps and sprinkles on top it was just over the tope dessert perfection ❤ Want them. Want ALL of them!


    • Thanks so much and so sorry for late reply (evil exams!) When stressed and in doubt, splashing sprinkles and other fun things all over the show is always the best answer! 🙂

And yes, I also tend to forget but we moved stuff around in the pantry and it was just this overdose of awesome hidden stuff that sprung out at me (and hence the mishmash of ingredients!) 🙂 I love just blending it straight up with dates and a bit of cacao and eating it chilled like fudge – so good!
