PB hummus + jam S’mores {vegan MOFO!}


I hope I’m not ruining anyone’s childhood by changing up the S’more a little, but I don’t have patience to make marshmallows (ok, so I don’t have a candy thermometer, rather!) and my childhood wasn’t one spent outside stuffing cookies with chocolate and white fluff (although if I’d known it existed I would have). Instead, I spent a ridiculous amount of time making endless PB & jam sandwiches; a food group unto itself. Well, there’s a time and place for everything, and the time for sandwiches is waning in my life as I find glee in better things, like lettuce wraps or PB & jam licked right off a spoon. This concoction is the fancy version of the spoon. With a fix of protein, grains, fat and fruit, I think I have my food pyramid covered 😉

pbhummussmorespreadOne thing I love doing is changing up what I did as a kid with the know-how of adulthood and the loom of diabetes. I know that the one thing that’s changed is that, instead of buying everything ready-made, I tend to try and make as many things from scratch as possible. Hummus, crackers, jam – sure, you can slip it into your grocery basket, but it’s infinitely better smelling freshly backed graham crackers, or using the excuse of “tasting” to spoon up the sides of a food processor to eat up leftover PB hummus. Also, berries! 😀 pbhummussmorespread1So this isn’t quite a blow-by-blow recreation of a childhood meal, which is today’s Vegan Mofo theme, but it’s close enough. Childhood snacks made a bit more human, if you like. I’ll admit that I’m somewhat late (fashionably) to the Mofo party and didn’t sign up, but I’ll still be popping in now and again and delving into some of the fun themes and topics planned my the Vegan Mofo team. 😀grahamcrackernomGraham crackers (makes 20 + based on this recipe by CCK):

  • 1/2 cup buckwheat
  • 1/2 cup + 2 TBSP almond flour
  • 2 tsp baking powder
  • 2 tsp vanilla
  • 4 TBSP sugar
  • 1 TBSP liquid sweetener
  • 1/2 TBSP blackstrap molasses
  • cinnamon galore
  • 1/4 cup + 1 TBSP water

PB hummus:

  • 1 can chickpeas
  • 2 TBSP crunchy peanut butter
  • 1 TBSP apple cider vinegar
  • 1 TBSP lemon juice
  • 2 TBSP liquid sweetener
  • 2 tsp cardamom
  • 2 tsp cinnamon
  • 2 tsp ginger
  • pinch salt

Strawberry jelly jam:

  • 1 TBSP dry mint
  • 1 TBSP cinnamon
  • 2 cups whole strawberries, measured then sliced thinly
  • 2 TBSP water/lemon juice
  • 1 tsp psyllium husk


  1. Preheat your oven to 180C and line a baking tray.
  2. Mix your dry ingredients for the crackers in one bowl and the wet in another. Mix together until it forms a dough ball.
  3. Roll out your mixture between two baking sheets until nice and thin. Cut your crackers into rectangles or squares.
  4. Bake for 8 – 10 minutes until browned. Let them cool before storing in a tupperware.
  5. Meanwhile, blend your hummus ingredients until smooth (adding more sweetener/spices to taste, keeping in mind it’s the jam that’s supposed to give sweetness to the combination of cracker, hummus and jam).
  6. Heat your sliced strawberries with the water/lemon juice + spices until it starts to bubble gently. Let it simmer for 5 minutes or so, using a wooden spoon to break the berries apart further.
  7. After five minutes add your psyllium husk powder and stir to combine. It should start to gel pretty quickly. Cook for 2 or so minutes more, then transfer to the fridge to chill for 20 or so minutes.
  8. Assemble and munch! Keep your crackers in the pantry to ensure they remain crisp and the other ingredients in the fridge.

The slightly bitter blackstrap taste of the crackers with the subtle depth of the hummus and glorious jam together just work really well for an on-the-go snack. I wouldn’t suggest making it ahead of time and storing it though, since it does get somewhat squashy with the jam, as crackers do. pbhummussmorestack1These are so filling though! The hummus really does the job of making you feel like you’ve munched a substantial bit, even if it’s just for one S’more sandwich. With work getting more and more intense and the assignments piling up, easy-to-make snacks like these that tide you over are going to be a life saver.  pbhummusSpeaking of life savers, Man-thing and I had our third wedding anniversary yesterday. I am such a lucky duck to have bagged a crazy creature such as him – my life would really be a shadow of existence if he wasn’t in it as my partner in crime and cats. ❤
pbhummussmoresyumWhen I was a kid I never fantasized about marriage or weddings or any of that, and even when we decided to get together officially or married it was a very conversational situation: no funny business or pomp, which is how I like my life. No fuss but lots of fun!pbhummussmorecrunchMuch like these gorgeous, bursting-with-colour treats! If I knew my life or munchies was going to turn out like this as a kid I would have been a lot happier and a lot more circumspect about what I ate (as in, not straight into the warpath of pre-diabetes). I love that my palate has adapted to different, more unrefined tastes, in some ways; going back to basics has never tasted so good!

    • Ahoy! My sympathies on the strawberries – I see from your post that you eat raspberries though; that and blackberries make the best jam! Also, I love your coffee vibes – I can relate 100%! Watching GG was always life affirming and made me feel like less of an addict 😉 Definitely going to keep track of your mofo antics!
