29 days of rice – carrot hummus calzones – day 10


Tomorrow is the big move! It’s crazy business at the moment but we are just pushing through and determined that everything will go well. If you’re into that sort of thing Man-thing is a Taurus and I’m a Capricorn, and 13 year old me would have nodded sagely at two of the most boring zodiac signs doing their best to live up to their own organizational standards. Let’s just say we have an open door policy for calming agents!


For fuel I decided on homemade, awesomesauce rice-based “calzone” and an easy sauce – my food processor and blender are going in the car with me since I don’t trust anyone with my precious life savers, but this is easy enough to make as a last supper of sorts, since all you really need is a baking pan at minimum and a panini press if you’re feeling fancy. I guess “calzone” is taking liberties, and I’ve lived in Italy for half a decade so I know the seriousness of my offence. I’m going to thumb the rules and go with my gut, which demanded rice pizza, but also wanted the delight of the panini press. Maybe quesadilla is the right word, but honestly! For the “calzone” I used this wonderful rice pizza recipe from Natural Noshing which I’ve made before with lots of success. It’s pretty nifty as pita slices or pizza, and the rice just gives it an awesome undertone.

Ingredients (serves 2):

  • 1 batch rice pizza (leave out the last 5 minutes of baking) –> NB: Split your dough in two and bake in two small pizzas on a sprayed baking sheet.
  • 1/2 cup white beans
  • 1 cup diced and super steamed carrots (as in, melt-in-your-mouth)
  • 2 tsp tahini
  • 1 TBSP nutritional yeast
  • Paprika, herbs of choice
  • handful basil leaves
  • Optional: 1/2 – 1 tsp curry powder + 1 TBSP jam of choice
  • Optional: artichokes would be delish!
  • Optional: for a creamier carrot dish add some more tahini


  1. Split your rice pizza dough in half, spread into two circles, and bake according to instructions on a flat baking tray/sheet MINUS the last 5 minutes (where you would have added the toppings).
  2. Meanwhile, blend your carrots until broken down, then add the rest of the ingredients and blend until creamy. You’ll have little bits, but that’s fine.
  3. Heat up your panini press and spray it.
  4. Place your carrot hummus filling in the bottom half moon of your pizza. Gently fold over the top half, then grill for 5 minutes. Serve warm with bbq sauce, chutney, or tomato sauce!

I think we can all agree that this is delicious? If you like (since I know you’re all in squash mode) you can replace the carrots with pumpkin, but with the squishy white beans I figured a bit of chew would be good.


Anyway, can I just say uggghh and yay all at the same time? Even though everything has happened very quickly, it still feels painfully slow somehow – I *know* we could move all the boxes ourselves, but we’ve now put it on our inventory for the movers so it seems silly to do it ourselves when it’s being paid for. So in the meanwhile, boxes are everywhere! I guess it’s a good thing I have this awesome calzone to keep me company for a short while. 🙂

    • 😀 Thank you! And yes, yumminess galore, even if the photos are rather pants. If you have time try whip up some plum ketchup to go on the side!


      • I’ve never had plum ketchup! Sounds amazing! Ahh if only… Back in my wee student flat in Brighton now and there’s no extractor fan, so have to be careful when cooking pungent things, plus my resources are a bit more limited. I had this for lunch with tomato sauce though and that it was lovely!:D
