29 days of rice – buckwheat puff granola + chocolate rice granola truffles – day 7


For this day of rice I’m going to go uber basic but not skimp on the deliciousness. Everyone loves truffles, naturally, and there’s nothing better to have in the house to pop into your mouth when you’re feeling peckish for something sweet. I’ve used puffed brown rice cereal today for lightness on the rice factor, because dates by themselves are pretty much nature’s truffles!


These treats are dead easy to make and are based on what you usually would have in the house to throw into the mix. Sometimes you want a treat without massive efforts or special shopping trips (or can’t afford that luxury!). Also, with our moving to a new house we’re getting lots of natural exercise carrying boxes everywhere, and I figure that deserves a bit of edible glee.

Before I can share the truffles you first need to whip up some easy granola! Remember that the buckwheat needs to be soaked overnight, so this process is a bit stretched but very much worth it. This granola is based on Amanda’s awesome cinnamon granola which is just heavenly.

trufflegranolaCinnamon buckwheat puff granola (serves 2-3):

  • 1/4 + 1/3 cup GF oats
  • 1/3 cup soaked raw buckwheat (soaked for at least 5 hours or overnight)
  • 1/2 cup puffed brown rice cereal
  • 2 TBSP sunflower seeds
  • 1 TBSP flax powder
  • 2 TBSP ground cinnamon
  • 1 TBSP ground ginger
  • 1 1/2 tablespoon coconut oil, melted
  • 1-2 TBSP NuNaturals Simple Syrup  OR 3 TBSP maple/agave syrup
  • Optional: raisins, nuts, etc


  1. Preheat to 180C and spray a baking sheet. I find silplat stuff is rather rubbish for little squiggly ingredients.
  2. Rinse your soaked buckwheat thoroughly and then pat it dry.
  3. Mix the dry ingredients in a bowl, then add the melted coconut oil and syrup.
  4. Spread your mixture out evenly on your baking sheet and bake for 15 – 20 minutes, stirring halfway.
  5. Once it’s done you can add your raisins or dry fruit – it’s obviously personal taste but I find my raisins and stuff chars quickly, and the baked crunch goes nicely with “fresh” dried fruits. If you prefer baked, by all means add it with the mixture!
  6. Let it cool completely before storing in an air-tight glass jar if need be.

 granolatop1So yes, this makes approx 350ml…but I can’t be certain because I stuffed my face royally when it came out of the oven….as I was putting it into the jar…and again later, just to make sure it hadn’t magically altered its delicious properties. It really is that easy but tasty!

truffleprofileChocolate rice granola truffles (serves 9):

  • 3/4 cup dates, soaked in coffee or liquid of choice for 1 hour then drained
  • 2 TBSP carob/cacao powder
  • 1 tsp maca powder
  • ginger + cinnamon spice
  • 1 heaped teaspoon blackstrap molasses
  • 3/4 – 1 cup cinnamon buckwheat puff granola
  • 2 TBSP NuNaturals Simple Syrup/agave or maple syrup
  • 1 dropper NuNaturals NuStevia Liquid
  • Optional: 2 TBSP chocolate chips
  • Options for coating: crushed pistachios, cacao powder, matcha powder


  1. In a food processor, pulse the dates until the broken down somewhat.
  2. Pulse together all ingredients until mixed (not pulverized, just mixed!). Fold in chocolate chips if using.
  3. Take a heaped tablespoon of batter at a time and roll into a ball with damp hands (helps not to stick).
  4. If you like, roll your truffles in the different powders you may have lying around, such as cacao.
  5. Store in the freezer and thaw a bit before eating, or else leave them in the fridge for a gooier delight.

trufflecloseupI made these at 21h00 last night, because they are really that easy, but I can say that it sparked some furious munchies in me, just out of deliciousness. I had just eaten half a pizza but once I get home and bundle into pajamas it’s like my brain goes into pre-hibernation mode. If I could sleep past 04h45 each day I guess it would make sense, but I think my body is just greedy. Still, with these truffles around I really can’t blame it. :p

trufflebiteout1Oh, and these truffles will work great with most dried fruit, especially figs…and guess what we found in our garden? Our very own fig tree!!!! Finally my maiden name can fly high and I can stuff my face with figs til bursting, because they are just the most awesome thing ever. I should probably take the time to further explore our new lair, but with moving up and down it’s difficult to really discover these little treasures. Luckily we have a whole Sunday (hopefully) to ourselves to glee and gloat!

trufflebiteoutMan-thing claims these would be even more superior rolled in icing sugar, which just shows you how different our tastes are. Icing sugar was the first thing I packed to take to the new house because I thought it was the most useless ingredient. Whoops! I kind of see what he’s getting at, but that’s for real sugar monsters. I love my truffles as natural as possible!

    • Hi! Just the granola itself goes in the oven, which you then mix with the truffle ingredients. 🙂

      In fact, I don’t think you’d have to be terribly brave to mix together the granola ingredients raw and add them unbaked to the truffles, since nothing on there should give you hassles!

    • Thank you – they are so easy even the cat could make them 😀 Coffee is the most delicious nectar – I’ve decided to soak all my date projects in some strong brew from now on – it just adds another layer of richness, and you can always sub decaf for people who are iffy about caffeine. 🙂
